Spicy Ground Beef and Hominy Casserole
A family favorite , spiced up with Underwood Ranches Spicy BBQ Sauce.
1 lb ground beef
½ c celery, sliced
3 cloves garlic, minced
1 large onion, chopped
1 T olive oil
1 (7 oz) can chopped mild green chiles
1 (15 oz) can tomato sauce
½ c sliced black olives
½ t salt
½ t cumin
2 T UR Spicy BBQ Sauce
1 t pepper, to taste
2 (16 oz) cans or 4 c white hominy, drained
¾ c grated cheddar cheese plus ½ c more for topping
Brown the ground beef and drain the fat; saute celery, garlic, and onions in oil until onions are slightly soft.
Add the chiles, tomato sauce, black olives, salt, cumin, UR BBQ Sauce, and pepper and simmer for 5 minutes.
Add drained hominy and cheese to the meat mixture, top with more cheese and bake in a casserole dish at 375 for 30 minutes. Serve with a salad and bread or corn chips.
