UR Verde Glazed Cornbread - Recipe
UR Verde Glazed Cornbread
¾ c flour
1 ¼ c corn meal
1/3 c sugar
3.5 t baking powder
1 c buttermilk
1/3 c butter, melted & cooled
1- 2 jalapenos, chopped fine
Verde Honey Glaze*
Grease cast iron skillet or 2 cornstick pans; mix all ingredients and pour into prepared pans. Bake skillet or an 8×8 pan for 20 minutes at 400 degrees. (Bake cornstick pans for 13-15 minutes at 400 degrees.) Bake until surface starts to brown.
Remove cornbread from oven and prick top with fork. Brush or pour on Verde Honey Glaze and return to oven for a couple of minutes to soak in.
*Verde Honey Glaze – Melt ¼ c salted butter, stir in 2 T honey and 1 T Underwood Ranches Verde Hot Sauce.
Can also make a Verde Honey Butter to spread on cornbread at the table. Just use softened butter instead of the melted butter. Add more Verde as needed.
